Pour some of the coconut milk into a pot and bring to a boil. Add the green curry paste and stir-fry until fragrant and the oil separates.

Add the chicken and stir-fry until cooked through. Pour in the remaining coconut milk and water. Simmer, then add kaffir lime leaves, pea eggplants, and Thai eggplants. Cook until the eggplants are slightly softened. Season with fish sauce, sugar, and seasoning powder to taste.

Once the curry is boiling and the flavor is to your liking, add sliced red and green chili peppers and Thai basil leaves. Serve hot.
