Preheat oven to 425. Coat baking sheet with spray.

Boil potatoes until tender. Dry, cut into halves or quarters and place on baking sheet. Spray, salt and pepper, and bake for 20 minutes.

Combine dressing ingredients, set aside.

When potatoes are out and slightly cooled, gently toss all ingredients together with dressing.
