It needs to be brought to boil in order for the setting to occur. It is low in saturated fat and cholesterol but high in calcium, folate, iron, and vitamins among others. It’s quite different from gelatin or jello which are sold in the supermarkets. The texture of agar agar is stiffer and less chewy than gelatin or jello.
