Cut up the belly pork

In a bowl mix all the marinade ingredients together stir and mix. Then add the cornflour and mix.

Then add the belly pork and marinate for 2 hours

When ready to cook, add 1 tbls veg oil and when heated add the ginger,

Add the pork pieces to the hot oil and fry turning the meat over all the time.

Fry for 10 minutes like this on high heat

Turn down and let it simmer for a further 10 minutes add a tbls sirracha sauce mix and leave to simmer for a further 10 minutes

Near the end add some chopped crispy sweet peppers

And serve on a bed of chinese lettuce

Serve with chips and a side salad

You can also grill it at the end if you would like it crispy. 😀
