In a pot, add the coconut milk, then the galangal, lemongrass, kaffir lime leaves, and shallots. Add the chicken and cook over low heat until it comes to a gentle boil.

Add the winter melon. Season with sugar, fish sauce, lime juice, and chilies. If the soup is too thick, add water. Taste and adjust the seasoning as desired.

Top with sliced green onions and cilantro. Turn off the heat, ladle into bowls, and serve.
