Ingredients

2 servings
  1. 1 baglarge carrots
  2. 1/2 cupvegetable bits, diced (whatever is on hand - onions, broccoli, etc.)
  3. 1/4 cupPepitas
  4. Spicy BBQ Rub or equivalent spices
  5. 1/2 stickbutter
  6. Frank's Red Hot or Cholula
  7. 1/3 cupbrown sugar
  8. Ranch Dressing (or yogurt + ranch seasoning -- private selection's green chile ranch rub is what i used)

Cooking Instructions

    Marinate carrots in softened butter, hot sauce, and brown sugar (either in gallon ziplock or in pan)

    Turn on grill to medium high

  3. 3

    If you are making ranch from scratch, mix yogurt, ranch seasoning, and tiny splash of olive oil.

  4. 4

    Put vegetable bits in broiler on high til brown/black and crispy.

  5. 5

    Grill carrots for 20-25 minutes, turning occasionally. Should be slightly blackened and able to put a fork through.

  6. 6

    While carrots grill, combine vegetable bits, pepitas, spicy BBQ seasoning and about 1 tbsp of brown sugar with mortar & pestle.

    Pull carrots off grill. Brush a tiny bit of butter and add seasoning mix. Reserve a bit of seasoning to top dish with.

  8. 8

    Spread ranch on plate, top with carrot and seasoning mixture, garnish with additional seasoning.
