Wash all ingredients thoroughly. Since the herbs are eaten raw, make sure to clean them well. Boil the pork, pan-fry the shrimp and peel them, cook the eggs into thin omelets and slice into strips.

Wash the cucumbers and carrot, then cut them into thin strips. Slice a little extra to add to the dipping sauce.

Make the dipping sauce to your taste—some like it sour, spicy, salty, or sweet. I don't have an exact recipe, just aim for a balanced flavor that's a little salty, sweet, sour, and spicy.

For the dipping sauce, use good-quality fish sauce, sugar, lime juice, vinegar, calamansi (I use all three: lime for aroma, vinegar for a mild tang, and calamansi for gentle sweetness; ratio: 2 parts lime, 1 part vinegar, 1 part calamansi), chili, pepper, and a bit of fresh herbs.
