Ingredients

  1. Halfdozen Baby tomatoes
  2. 1 cup coriander finely chopped
  3. 3 spring onion
  4. 1 teaspoon salt
  5. ½ pepper
  6. 1/4 cucumber finely cubed
  7. 1 red onion chopped
  8. 1 red bell pepper finely chopped
  9. ½ cupyogurt
  10. 1 tablespoon garlic balsamic oil
  11. ¼ cup minced fresh dill
  12. 1/4 teaspoon chilli flakes
  13. 1 bowlboiled pasta

Steps

  1. 1

    Bring a large pot of salted water to a boil. Cook pasta according to package directions. Drain and rinse with cold water until pasta is cooled. Drain well.
    In a large mixing bowl, toss together cooked pasta with onion, spring onion, bell pepper, and cucumber

    In a small mixing bowl, whisk together yogurt, garlic oil, dill, salt, coriander and pepper.
    Pour sauce over pasta and toss until everything is well coated. Cover bowl with plastic wrap and chill at least 1 hour before serving.

Hi all, my name is Rekha. I am Indian by birth, born in Uganda, East Africa, I now live in Wilby, Northamptonshire/England.I retired at the age of 60 due to severe arthritis. I am married, a mother and grandmother.I learnt to cook from my parents at a very young age of seven. I started to cook simple dishes for the family and gradually learnt how to cook. My mum use to cook at our shop where we sold Indian sweets and savouries. I have learnt a lot from my mum. I started cooking fusion dishes and learning from others. My strong point is making sweet dishes and innovating new dishes. I can improvise and be creative in leftover dishes.I love being on Cookpad because I can share and learn new recipes. I have also made a lot of friends.
