Polish Cake

I'm not sure how this is polish but one of my friends at school used to make it - basically just sugar in lots of forms! You can add dried fruit to the mixture if you want it to appear healthier.

I'm not sure how this is polish but one of my friends at school used to make it - basically just sugar in lots of forms! You can add dried fruit to the mixture if you want it to appear healthier.

Put the biscuits into a plastic or freezer bag. It's up to you which kind - I used digestive and shortbread for this batch! Whack with a rolling pin until it's nice and crumbly.

Line the tin with baking paper or grease very thoroughly- it makes life a lot easier later on!

Melt the margarine in a large saucepan and add the golden syrup and drinking chocolate. Stir until melted.

Add the bashed biscuits to the saucepan and stir until combined well. The light crumbs should darken and the mixture will be heavy and stiff.

Then pour into the baking tray and flatten with a spoon. Leave to set in the fridge for at least 3 hours.

Melt the chocolate in the microwave or over boiling water. Pour over the biscuit base.

Leave the chocolate to set overnight or for another few hours in the fridge.
