Carefully wash the zucchini blossoms (which should be picked the same morning) and remove the yellow stamen inside.

In a large pan, heat half of the olive oil and sauté the onion for 2 minutes.

Add the rice and stir for 1-2 minutes. Add the tomatoes, salt, and pepper, and let simmer for 3-4 minutes.

Remove from heat and let cool slightly.

Add the herbs, mix well, and taste for salt. Prepare a shallow, wide pot.

Fill each blossom about 2/3 full, gently fold the edge, and place it in the pot with the edge facing down. Repeat with all the blossoms, placing them side by side.

Partially cover with water, add the remaining olive oil, and place a heavy plate upside down on top to keep them from opening during cooking.

Cover the pot and let them simmer until the water is absorbed and the rice is tender.
