Steps
- 1
Cut the potatoes into two. Layer them at the bottom of your sufuria. Place pieces of pumpkin on top of the potatoes. Spread the njahi at the top. Add enough water to cook the potatoes and pumpkin. Add enough salt. Cover and cook on moderate heat.
- 2
Once the potatoes and pumpkin are well cooked turn off the heat. If there is excess water left after the food is ready drain it into a cup and set aside.
- 3
Mash the mixture until all the ingredients are completely blended in. You can use a masher or a bottle to achieve this. In case the food is too dry add the water you set aside to get your desired consistency.
- 4
Fry some onions until they brown. Add the garlic and ginger paste and cook for a minute.
- 5
Add the mashed njahi into the pot and mix thoroughly. Make sure the mashed food is completely mixed with the onions, garlic and ginger.
- 6
Serve with a stew of your choice.
- 7
You can also take it in the morning with a cup of tea.
