Heat a little oil in a skillet and cook the chicken breast, seasoning it with salt, pepper, and Cajun seasoning.

Once the chicken is cooked, cut it into small strips and set aside.

In the same skillet, place one flour tortilla, sprinkle some shredded cheese on top, add the sliced chicken, and cover with more cheese. Make sure the ingredients don’t reach the edge of the tortilla.

Press the tortillas down slightly and cook over medium heat until the cheese melts and the tortilla starts to brown. To help the cheese melt, cover the skillet with a lid or a plate.

Flip the quesadilla to cook the other side.

Cut into 4 pieces with a pizza cutter and serve!
