Wet fry Matumbo

This one of my favourite meat types. It's so cheap and easy to prepare. I remember the first I ate it, it didn't taste good but after eating it several times, I developed a love for it.

Steps
- 1
Cut the Matumbo into small pieces and put to boil with salt and garlic.
- 2
Boil until tender this normally takes 3 to 4 hours. Afterwards, drain of excess water and add oil to the Matumbo. Then add in the diced onions
- 3
Cook for 2 minutes then add in tomatoes. Cook until tomatoes are tender. Add in little water(2tbsp) to prevent the Matumbo from burning.
- 4
Cook for 4 more minutes then it's ready.
