Place the pork in a deep oven-safe dish or baking tray. Pour the bitter orange juice over the pork and let it rest for 10 minutes, then add the cochinita pibil sauce from the carton on top.

Let it marinate for at least 1 hour.

Cover with aluminum foil and bake at 375°F (190°C) until the pork is fully cooked. Remove the foil and bake for 10 more minutes.

Now let's make some pickled red onions to go with it! Thinly slice the red onion and add vinegar, lime juice, dried oregano, and enough salt (if you like it spicy, add a thinly sliced, seeded habanero pepper). Mix well—the longer the onions marinate, the better the flavor!
