Ingredients

  1. 1medium onion chopped
  2. 1 cuppearl barley
  3. 1/2 cupslivered almonds or pine nuts
  4. 1/4 cupbutter
  5. 1/2 cupfresh parsley
  6. 1/4 cupgreen onion
  7. 29 ozbroth

Steps

  1. 1

    Saute the onion, barley and nuts in the butter until the barley is browned

  2. 2

    Stir in parsley and green onion

  3. 3

    Transfer to a greased baking dish and add the broth

  4. 4

    Bake at 350°F for 1 1/4 hours or until the barley is tender and all the liquid is absorbed
