It was Throwback Thursday between us Chefs and I decided to make one of my step mothers crazy stupid easy delicious meals from my youth. I made my meatloaf the night prior, chilled it and yanked the rest of my ingredients from the pantry just prior to baking. This entire delicious hot meal took me less than 5 minutes manual labor.

  • 1 PoundFresh Lean Ground Pork
  • 1 Pound80/20 Fresh Ground Hamburger
  • 2 CupsItalian Bread Crumbs
  • 1/3 CupDehydrated Onions
  • 2LG Egglands Best Eggs
  • 1/2 CupWhole Milk
  • 1 tspFresh Ground Black Pepper
  • 1 tspKosher Salt
  • 1 tspGranulated Garlic Powder
  • 1 tspGranulated Onion Powder
  • 1 tbspAu Jus Extract
  • 1 tbspBetter Than Bouillon
  • 1 PackageMcCormick Meatloaf Seasoning
  • ● For The EZ Mashed Potatoes
  • 2Trays Bob Evans Mashed Potatoes [the best brand out there]
  • 2 JarsHeinz Homestyle Brown Gravy
  • ● For The EZ Sweet Corn
  • 2 CansDel Monte Sweet Corn
  • 1 tbspDried Parsley
  • 1/4 tspDried Rosemary
  • 1/8 CupSweet Salted Butter
  • ● For The Options
  • Thick Sliced Garlic Bread

Steps

1.5 Hours
  1. 1

    Mix everything together well. Pack meat in a translucent pan tightly. No air gaps. Create wells to the sides just in case any fat wants to boil over. Dash top with black pepper, garlic and onion powder.

    Bake meatloaf at 350° for 1.5 hours. Allow meatloaf to stand for 5 minutes prior to serving. Top with hot gravy.

    Au Jus extract pictured.

    Season and heat your corn.

    Heat your gravy as well. Back in the day, our mothers used packet gravy. I would not recommend it unless you really like a heavy salt content.

    Heat your mashed potatoes. Man oh man is this a good brand! You'll want this! No mess - no fuss!

    Garlic bread pictured. Just oven heat as per manufacturer's directions.

My culinary specialties as an easy going Chef include Asian, Mexican, Cajun, BBQing, Grilling, Irish Pub food, Low Country foods, anything seafood related, extra spicy foods, fresh meat, extra fresh vegetables, US comfort, kid friendly and super fast, quick and easy foods.
