Steps

Dry roast the peanuts for 5-7 and grind into course powder

Place the gram flour in a bowl
- 3
Add adequate water and to create a thin slurry so that no lumps remain

Heat 2 tablespoon oil in a wok and temper with mustard seeds,asafoetida and ginger garlic paste

Once the seeds splutter, add the coriander leaves, ground peanut and salt
- 6
Mix well till the leaves wilt and release moisture(will take a few seconds only)

Next add the gram flour slurry and dry spices

Mix well, stirring constantly till the entire mix comes together

Take off heat once done

Once the mixture is lukewarm, transfer onto a greased plate and spread it into a square shape

Let the mixture set for 10-12 minutes before you cut into cubes

Heat enough oil for deep frying and fry the cubes/vadis till crisp and brown on both sides

Rest the fried vadis on an absorbent paper for a few minutes

Serve immediately as a snack or as an accompaniment with your cuppa. Enjoy!
