Wash the zucchini well, trim the ends, and grate it into a bowl. (I like to use two different grater sizes.)

Grate or crumble the tofu into the same bowl.

Add the cumin and salt. Gradually add breadcrumbs until the mixture forms a dough you can handle.

With damp hands, shape the mixture into balls, then roll them in flour.

Fry in oil until golden brown.

Tip: I like to serve them with a fresh salad and yogurt sauce.
