  • 1medium onion, diced
  • 1/2green pepper, diced
  • 4 stalkcelery, diced
  • 2 clovegarlic
  • 1 Tbspcooking oil
  • 1 tspsalt
  • 1/2 Tbsporegano
  • 1 Tbspbasil
  • 1/4 Tbsppaprika
  • 1 Tbspchili powder
  • 1 Tbspcumin
  • 1/2 cuproasted corn kernels (optional)
  • 1 cupdiced tomatoes
  • 3 cupsbrown rice, cooked

Steps

30 mins
  1. 1

    Saute onion, celery, green pepper and garlic in oil until tender.

  2. 2

    Add salt, oregano, basil, paprika, chili powder, cumin, (corn) and tomatoes.

  3. 3

    Simmer until tomatoes are soft.

  4. 4

    Stir into rice.
