1medium onion, diced
1/2green pepper, diced
4 stalkcelery, diced
2 clovegarlic
1 Tbspcooking oil
1 tspsalt
1/2 Tbsporegano
1 Tbspbasil
1/4 Tbsppaprika
1 Tbspchili powder
1 Tbspcumin
1/2 cuproasted corn kernels (optional)
1 cupdiced tomatoes
3 cupsbrown rice, cooked

Saute onion, celery, green pepper and garlic in oil until tender.

Add salt, oregano, basil, paprika, chili powder, cumin, (corn) and tomatoes.

Simmer until tomatoes are soft.

Stir into rice.
