Ingredients

40 mins
1 kg cake
  1. 7eggs separated
  2. 1 cupcastor sugar
  3. 1 cupall-purpose flour
  4. I tsp baking powder
  5. Vanilla essence
  6. For the syrup
  7. Diluted rum.
  8. For the filling and deco
  9. 250gmsStrawberries
  10. 500gmsWhipping cream
  11. Extra strawberries for the garnish
  12. White compound chocolate shavings

Steps

    Preheat the oven to 180 degrees C

  2. 2

    Separate egg whites from the yolks. Beat the eggs whites till they double in size

  3. 3

    Add in the egg yolks and continue beating on medium speed

  4. 4

    Add the sugar a tablespoon at a time to avoid deflating your egg whites.. Add in vanilla essence at this point

  5. 5

    Add in the flour and baking powder gently folding it into the batter.... Till you see no flour streaks

  6. 6

    Pour your batter into the pan and let bake for 40 minutes or till ready

  7. 7

    Prepare your syrup by mixing your rum with some coffee.. Cut some strawberries for the filling

  8. 8

    Once your cake has cooled, cut into three layers... Spray of the coffee rum syrup on each layer

  9. 9

    Time to assemble.. Place some whipped cream on the first layer followed with the cut strawberries...add the second layer and do the same. Place the last layer and crumb coat your cake.

    Add more whipped cream to cover the cake evenly... Garnish with strawberries about 4 and some white chocolate shavings..
