Sweet and Spiced Fried Chicken, Delicious ;)

I've kept this recipe for years. Back when I wasn't married, I got this recipe from a tabloid at my mom's house. I asked her to make it for me because, you know, I was a spoiled mama's kid.. haha.. It's so delicious, sweet, fragrant, and has a unique aroma.. so I saved this recipe.. who knows, it might be useful later..
I also add chicken gizzards and hearts, they're so good..
Eat it with cooked shrimp paste chili sauce, stink beans, and fresh vegetables.. it's amazing :)
The rest goes into Tupperware.. I usually make at least 2-3 chickens at a time.. since it takes a while to boil, and uses a lot of gas, I just make a lot and store it in the fridge, then fry it when I want to eat.. I also put the chili sauce in the fridge, just microwave it as needed ;)

Sauté the spice paste in 3 tablespoons of oil until cooked and fragrant.

Add the chicken and stir until the chicken turns slightly white (I also use gizzards and hearts because I like them).

Add the coconut milk and the remaining ingredients, cook on low heat until the chicken is tender and the sauce is reduced (don't forget to add salt and sugar).
I love it sweet, so I add more palm sugar and soy sauce.. haha.. - 4
Drain when cooked (store the rest in the fridge in an airtight container, just fry when you want to eat).

Fry in preheated medium oil. Serve with raw shrimp paste chili sauce and fresh vegetables.. yummy..

Since it's simmered on low heat for a long time, it becomes rich and fragrant ;)
