Pre heat oven to 180C

Prepare baking tins

Put rum,butter,and orange rind,sugar& orange juice in a pot and boil it till the butter melts.Let the mixture cool.

Sieve flour, baking powder mixed herbs

Add eggs,mixed fruits to the wet then add dry ingredients bit by bit

Bake until golden brown

When cool sprinkle 2 tablespoon of rum then wrap with a muslim cloth then store in a air tight container

Can be stored up to 10 weeks

Aged fruit cake is the best
