Kesar Rice Pudding (Phirni)

Initially soak few strands of saffron in warm milk and also soak two tablespoons of washed rice in water for half an hour

Boil one litre of milk and keep stirring constantly..break the cream which forms and scrape the sides of the vessel too

Now coarsely grind the soaked basmati rice

Add four tablespoons of sugar to the milk and let it dissolve..

Add the ground basmati rice but mix it in saffron milk and than add to the boiling milk to avoid lumps

Keep stirring constantly And let the rice cooks..take care to see that the rice doesn't stick to the bottom of the pan Add the powdered dry fruits

Off the gas once the milk thickens and the rice is fully cooked..let it cool

Now add the main ingredient that's the rose water..it gives a nice taste and aroma to the phirni.

.garnish with pistachios..Refrigerate and serve cool 😎
