Ingredients

2-3 servings
  • 250 gmssmall brinjals
  • 100 gmshung curd
  • 2 tbspmelon seeds
  • 1 tbspred chilli powder
  • 1/2 tspturmeric powder
  • 1/2 tbspkasoorimethi
  • 1/2 tbspgarlic paste
  • 2 tbspoil
  • to tasteSalt
  • Water as required

Steps

  1. 1

    Wash and dry the brinjals.

  2. 2

    Slit each of them vertically

  3. 3

    In a mixer jar put melon seeds and grind them into a powder

  4. 4

    To this add all the other ingredients like curd, garlic paste, red chilli powder, turmeric powder, kasoorimethi and salt

  5. 5

    Again grind it into a smooth paste

  6. 6

    Take out this paste in a bowl

  7. 7

    Now stuff this paste in the slits of the brinjals

  8. 8

    In the meantime heat oil in a kadai, first on high then make it slow flame

  9. 9

    Now put the stuffed brinjals in the hot oil and mix well, but gently

  10. 10

    Now add little water in the mixer jar, shake it a little

  11. 11

    Add this water to the brinjals, cover and cook them, until the brinjals becomes soft

  12. 12

    Sometimes the brinjals take more time to cook

  13. 13

    So if more water required add it to the brinjals

  14. 14

    When done take them out in a serving bowl

  15. 15

    You can have this with roti, parantha or even plain rice
