Soak the chiles, remove the stems and seeds. (You can add another type of chile for extra heat.)

Using a mortar and pestle or a knife, crush a pinch of oregano, a pinch of bay leaf, and 10 allspice berries.

Blend both mixtures together and add salt.

Cut the meat into strips and coat it with the blended mixture. Slice the onion into half-moons, add it, and let everything marinate for at least two hours.

Cook in a crockpot along with the potato and carrot, both sliced into 1/2-inch (about 1 cm) rounds.
