Ingredients

3 servings
  1. Moroccan Tagine -
  2. 1 tbsolive oil
  3. 1 red onion
  4. 50 gmchickpeas boiled and drained
  5. 50 gmraisins soaked in the water for 10 min
  6. 2 tbs harissa paste (recipe given at last)
  7. 1 tsp cinnamon powder
  8. 1 tsp ground cumin
  9. 100 gm diced tomato
  10. 50 gm black olives
  11. 1/2 cupcous cous
  12. 100 gm cottage cheese
  13. 50 gmdiced carrot
  14. 50 gm diced squash
  15. to tastesalt
  16. 1 tbschopped coriander or cilantro
  17. for harissa paste
  18. 4-5 dried chiles of your choice
  19. 1 tbs caraway seeds
  20. 1 tbscoriander seeds
  21. 1 tbscumin seeds
  22. 5 clovesgarlic
  23. to tastesalt

Steps

    Method -heat oil in a large pan,then add onions until browned, about 4-5 minutes. then add chickpeas, raisins, harissa paste, cinnamon, cumin, salt and pepper and cook, stirring,chopped tomato and add to the skillet; add 250 ml water, cover and simmer until the tomatoes and chickpeas are cooked for 10 min add olive and dice carrot and squash also, cover and cook until the carrot and squash are tender. stir gently, so as not to break

    Apart the carrot and squash too much, and simmer, uncovered, until the sauce is slightly thickened,While the tagine simmers, prepare the couscous according to package directions or soak with hot water for 5 -6 minutes add lemon juice salt, diced bell pepper, raising, black olive and chopped parsley now remove the tagine from the heat, then toss the diced cottage cheese in it to avoid hardness

    And stir in the cilantro, put the couscous one side of serving pot or plate and another side keep harissa tossed veggied, garnish with some boiled chickpeas, black olive slices, chopped parsley and raisins.
