Dosa is one of the most popular breakfast in India. And falafel is very popular middle eastern snack. Here I make a fusion dish with these two. The wrap is Indian and the stuffing is Arabic with Indian spice. And the combination is quite tasty.

Ingredients

  • 1 cupUrad dal
  • 3 cupsrice
  • 1 tbspsambar powder
  • For falafel
  • 1 cupkabuli chana
  • 1chopped onion
  • 2-3green chillies chopped
  • 1 tspcumin powder
  • 1/2 tspchilli flakes
  • 2-3 tbspchopped parsley
  • Cooking oil to deep fry the falafel
  • For hummus
  • 1 cupboiled chick peas or black chana
  • 1 tbsproasted white sesame seeds
  • 2big garlic pods
  • 1 tbspolive oil
  • 1 tsplemon juice
  • to tasteSalt
  • Some pickled salad
  • For pickled salad
  • 1cucumber
  • 1carrots
  • 2big chillies(mild spiced one)
  • 1 cupwhite vinegar

Steps

    Wash and soak dal and rice for 4 hours.

    Grind them in a mixer grinder with water and keep overnight to ferment.

  3. 3

    Soak kabuli chana(chick peas) overnight.

  4. 4

    In a mixture grinder put soaked chana, chopped parsley, chopped green chillies, chopped onion and salt.

  5. 5

    Grind to a coarse paste.

  6. 6

    Heat sufficient oil in a kadai(pan) and make small sized falafel pakodas or fritters with the paste.

    Keep aside.

  8. 8

    Now to make hummus add boiled chick peas or black chana to a mixer jar.

  9. 9

    Add garlic pods, chilli flakes, cumin powder,lemon juice,olive oil and salt.

    Make a smooth paste. Add water or chana stock if required to make the paste.

  11. 11

    Put in a bowl and adjust seasoning. Hummus is ready.

    To make pickled salad put cucumber, carrot and green chilli (cut in long strips) in a glass jar.

    Add white vinegar up to the level of the veggies.

    Keep overnight. Pickled salad is ready.

    Now all the Stuffings are ready. So we will make dosa.

  16. 16

    Heat a non stick pan or skillet.

  17. 17

    Grease with oil and pour 2 tbsp of dosa batter.

    Spread in circular motion to make a thin pan cake.

    Cover and cook for a minute.

  20. 20

    Remove the cover. Drop some oil to make it crisp.

    Gently remove from the pan with a spatula

  22. 22

    Like this make all the dosas you required.

    Now assemble the dosa wrap.

    To assemble take a prepared dosa. Sprinkle some sambar powder. Put some prepared falafel, hummus and pickled salad.

    Wrap the dosa to make roll. Cut in half.

    Dosa wrap is ready now. Serve immediately with some more hummus in the side.
