Boil mung beans in water until it is cooked. (Approximately 30-40 minutes) Set aside. It is easier to cook the beans if the water is already boiling before you add the beans and then cover the casserole.

Heat oil in a medium size casserole.

Sauté garlic, onions and ginger.

Add and sauté the pancetta affumicata. Cook until slightly brown.

Add the boiled mung beans and add water. Stir well.

Let boil and add a dash of salt.

Add the rucola.
- 8
Serve hot with rice and with a meat viand of your choice.
