In a large pan, without adding any oil, add whole chicken legs and skin face down. Once it's sizzling then remove it from pan. Cut into small pieces and set aside.

In the same pan, no need to add oil, add ginger slices cook until slightly browny. Add garlic and some cut red chilies.

Add sesame oil now. Add chicken back in.

Add rock sugars.

Add soya sauce and then cooking wine.

Stir the chicken on high heat until the sauce gets onto the meat.

Then add the remaining red chillies and basil leaves and spring onions. Cook for about 1 min then serve with white rice.
