Simple mozerella, tomato and basil salad.

Strip all the basil leaves.

Add rocket to a salad bowl.

Grind salt and 2 tsp pepper in a mortar and pestle. Add the olive oil too.

Add in the basil, coating fully and beating a little. Ee

Empty mortar and pestle into the rocket and toss.

Put a slice in each tomato and add to the salad. D the mozerella into small chunks.

Drain and then tear the mozerella into small chunks.

Add more pepper over the mozerella chunks.

Toss the salad and serve.
