Ingredients

30 minutes
3-4 servings
  • For aloo kachori
  • 3-4boiled potatoes
  • leavesChopped green coriander
  • 2 tea spoondhaniya powder
  • to tasteSalt
  • 1 tea spoonred chilli powder
  • 1/2 tea spoonanardana
  • 1/2 tea spoonajwain
  • Atta for Puri and kachori
  • 3 cupatta/ wheat flour
  • 1 tea spoonajwain/ carom
  • Oil for moan
  • 1 tea spoonsalt
  • For raita
  • 200 gmdahi
  • as neededBoondi
  • to tasteSalt
  • 1 tspKali mirch
  • 1 tspJeera powder
  • as neededOil
  • 1/2 tspRai
  • 1 tspRed chilli powder
  • For appetizer
  • 1big piece of ginger
  • 2lemon juice
  • 2green chillies
  • 1/2 tspSolid eatable turmeric
  • For Amla
  • 250 gmAmla
  • as requiredOil
  • 1 tspJeera
  • 1 tspDhaniya powder
  • 1/2 tspTurmeric powder
  • 1 tspRed chilli powder
  • 1 tspCoarsely grinded saunf
  • For launji
  • 2big sized raw mango
  • as neededOil
  • to tasteGur
  • to tasteSalt as per taste
  • 1 tea spoondhaniya powder
  • as neededWater
  • 1 tspCoarsely grinded saunf
  • 1.5 tea spoonturmeric powder
  • 1.5 tea spoonred chilli powder

Steps

30 minutes

    For kachori and Puri

    Knead atta with oil ajwain and water in soft dough

  3. 3

    Mash boiled potatoes add ajwain, dhaniya powder, red chilli powder, anardana, salt and green coriander leaves mix all

  4. 4

    Make small portion and put the mixture into it and make it like small Puri and fry in oil

  5. 5

    For raita

  6. 6

    Take dahi and add all masala bit of sugar too and boondi mix well

  7. 7

    For tadka take oil, put Rai and little red chilli powder add in the raita

  8. 8

    For Amla

  9. 9

    Cut Amla in small pieces, take oil in kadai put jeera, hing, amla add dhaniya powder, turmeric powder, red chilli powder, salt mix all and cover it for 10-15 minutes.Once it becomes soft put saunf and mix well

    For raw mango petha

    Cut petha in small pieces, take oil in kadai put methi daana, hing,onion saute till golden brown add petha dhaniya powder, turmeric powder, red chilli powder, salt mix all and cover it for 10-15 minutes and then add raw mango pieces and bit of sugar cover again and let it cook

    Garnish with fresh chopped green coriander leaves

    For appetizer

    Cut thin slices of ginger, turmeric and green chillies put salt and lemon juice mix well

  15. 15

    For launji

  16. 16

    In cooker put oil jeera hing and pieces of raw mango add dhaniya powder, turmeric powder, red chilli powder, salt water mix all and give 2 whistle. Put chopped Gur as per taste and saunf and mix well and cook till Gur dissolves in it
