Jalapeño Popper Soup

This is a staple meal in our home. Just what you need to warm you up or clear your sinuses!

Ingredients

  1. 3large chicken breasts, cut into bite size chunks
  2. 1red bell pepper, chopped
  3. 1small onion, chopped
  4. 4jalapeños, chopped (remove seeds for not so hot, leave seeds in if you like the heat)
  5. 2 cansgreat northern beans, drained
  6. 1 cancorn, drained
  7. 1 canpetite diced tomatoes
  8. 4 cupschicken stock
  9. 1 pkgcream cheese
  10. 1 tsp.cumin
  11. 1 tsp.chili powder
  12. 1 tsp.garlic powder
  13. 1/2 tsp.red pepper (less if you dont want so much heat)
  14. 1/2 tsp.pepper
  15. 1/4 tsp.salt
  16. Optional toppings for serving: shredded cheddar cheese, green onions, sour cream, bacon

Cooking Instructions

    Place chicken chunks in a large pot with a little bit of vegetable oil and add all seasonings; saute on medium high heat.

    Once chicken is half way cooked (still see some pink), add in red bell pepper, onion and jalapeño.

  3. 3

    Continue to saute until chicken is thoroughly cooked.

    Add in the chicken stock, corn, northern beans and tomatoes and simmer over medium heat for 15 minutes.

    Add in the cream cheese in chunks and continue to simmer until cream cheese is completely melted and blended in. Serve with toppings of choice. Enjoy!
