Ingredients

  • skinny rice sticks (soaked over night or at least 7 hours)
  • 2 tbspcooking oil
  • 8shrimp
  • 2fried tofu (cut into pieces, use the really firm one, not even the pressed one)
  • 1big shallots (cut into small dices)
  • 2eggs
  • 1 handfulbean sprouts
  • dried shrimps
  • 1 stalkspring onion or chinese chives (cut into 2 inch length)
  • 1lime
  • chicken (optional)
  • ---Sauce---
  • 3 1/2 tbspfish sauce
  • 4 tbsptamarind juice
  • 2 1/2 tbspsugar (brown sugar or gula melaka)
  • 3 tbspwater

Steps

  1. 1

    Soak the noddle over night or at least 7 hours.

  2. 2

    Heat the oil in a wok on high heat. When the wok is hot enough, add shrimp and cook it, once done, set aside.

  3. 3

    In the wok, add tofu in and shallots and stir fry for until brown.

  4. 4

    Add noodles in. stir fry and add dried shrimp in. Add chives in.

  5. 5

    Add sauce and bean sprouts.

  6. 6

    In another wok, fry eggs (dont use the same wok if there isn't much space).

  7. 7

    Serve with lime.

  8. 8

    Add bean sprouts

  9. 9

    Serve with lime wedge and peanuts

Living in Dublin with my Irish partner who is celiac. My recipes are Gluten Free (GF). Most of my recipes are Asian food and I use soya sauce a lot in them. Regular soya sauce is not GF, but you can get GF one from supermarkets.

I've tried making Pad Thai a couple times but the noodles always seem to come out soft and goopy :( Your recipe sounds a lot simpler than the ones I tried before. Will try!
