This recipe is really simple and has only three ingredients, but it takes some preparation.

Cooking Instructions

Melt the white chocolate in a glass bowl over hot water.

Take a basting brush, and paint a thin layer of whites chocolate around the base and sides of a muffin tin. Place in the freezer to cool.

Repeat step two at least four times, until the cups are 1/2 cm thick.
- 4
Blend the blackberrys and mint in a blender. Leave to cool in the fridge.
- 5
Carefully peel the pots out of the mold. Place 1tsp of the blackberry compote into each pot.
- 6
Serve with a mint garnish.

Maybe I should have just searched for a recipe. But I really wanted to come up with my own recipe.These muffins are really filling, and are packed with the vegetable based proteins, vitamins, minerals, and non-soluble fiber of okara - plus the polyphenols in the chocolate. It takes about an hour after eating this to feel full, so although you may think that you can eat some more, I don't recommend it. Eat with plenty of liquids. For 6 muffins.
