It's vegetarian month, so here's a delicious vegetarian dish for everyone to enjoy!

Separate the bok choy leaves and wash them thoroughly in diluted salt water. Slice the carrot into rounds.

Soak the dried shiitake mushrooms in water until soft, trim the stems, wash, and gently squeeze out excess water. Dissolve 1 teaspoon cornstarch in a little water and set aside.

Bring water to a boil with a pinch of salt. Blanch the bok choy until just tender and bright green (don’t overcook), and blanch the carrot slices as well.

Sauté a little garlic until fragrant, then add the mushrooms and carrots. Stir-fry, then season with vegetarian oyster sauce, soy sauce, sugar, and black pepper. Add the cornstarch mixture to thicken the sauce. Adjust seasoning to taste.

Arrange the bok choy on a plate, pour the mushroom and carrot oyster sauce over the top, and sprinkle with a little black pepper.
