On a clean counter, measure out the flour and salt into a mound.

Make a well in the flour and salt mixture and crack the eggs into a bowl. Add the olive oil to the bowl.

Whisk the egg and oil, then add to the center of the flour mixture.

Slowly incorporate the flour and egg mixtures. Knead for 7 min. or until formed into a ball.

Place the dough ball into a bowl with a dish towel on top, leaving it to rest for 30 - 45 min.

Cook for 2 - 3 min in salted, boiling hot water.
