Even during the summer I sometimes fancy something hot and hearty. I made this using really fresh vegetables from #seasonsupply. The cider adds just the right amount of sweetness and acidity.

Even during the summer I sometimes fancy something hot and hearty. I made this using really fresh vegetables from #seasonsupply. The cider adds just the right amount of sweetness and acidity.

Ingredients

4 servings
  1. 2large red onions
  2. 4 clovesgarlic
  3. 2large broccoli florets
  4. 3large potatoes
  5. 3large carrots
  6. 3large tomotoes
  7. 1large bunch parsley
  8. 1 tinblack beans
  9. Juice of half a lemon
  10. 1 cupvegetable stock
  11. 2 cupscider
  12. 1 cupwater
  13. Salt and pepper
  14. 1large pinch cumin
  15. 1large pinch smoked paprika
  16. Vegetable oil

Cooking Instructions

    Peel and prep your vegetables and herbs. Juice the lemon.

  2. 2

    Heat the oil in a large pan. Sautée the garlic and onions until translucent.

  3. 3

    Add all the remaining vegetables, herbs and spices. Cook for 3 minutes in the oil whilst stirring.

  4. 4

    Add the water, lemon juice, cider and stock. Cook for 25-35 minutes, or until the potatoes begin to break up and the sauce is nice and thick. Add more water if the stew is too thick.

    Serve and enjoy :)
