Ingredients

30 minutes
3-4 servings
  1. 250 gmQuinoa
  2. 2large red or yellow peppers(i used both)
  3. 90 mlolive oil
  4. 1onion chopped
  5. 1 clovegarlic, crushed
  6. 1small red chilli, chopped
  7. 1 tspground coriander
  8. 1 tspground cumin
  9. 1 tspground cinnamon
  10. 2tomatoes peeled, deseeded and chopped
  11. 2 tbspred wine vinegar
  12. to tasteSalt and black pepper

    Wash the quinoa and soak it in cold water, cover and leave overnight.

    The next day, grill the peppers for about 5-10 minutes turning them often until charred all over. Set them aside until cool enough to handle.

    Drain the quinoa and transfer to a muslin lined steamer. Cook it covered for about 10 minutes or until the grains are puffed and tender.

    Heat oil in a pan. Fry garlic, onion, chilli and spices for 3-4 minutes. Transfer it to a bowl and stir in cooked quinoa and tomatoes. Peel and deseed the charred peppers. Chop and stir it into quinoa bowl. Drizzle some olive oil, the vinegar and season to taste. Serve warm or allow to cool.
