Brussels sprouts are a terrific low Glycal choice for a side dish during the fall and winter when they are in season and at their most flavourful.

Place the Brussels sprouts in a large pot of cold water and set over high heat. As soon as the water reaches a boil, set a timer for 2 minutes. Drain and rinse them under cold water to stop the cooking process. Set aside in a colander.

Place the bacon in a large skillet set over medium-high heat. Sauté the bacon until it has started to become brown and crisp. Remove pan fro heat and spoon off and discard half of the rendered bacon fat.

Return the skillet to the heat and add the Brussels sprouts. Toss gently and season with a little salt and pepper. Continue cooking until the Brussels sprouts are piping hot and tender; serve immediately. 171 calories/serving; GL=0.5, Glycals=3.5
