2 cfresh baby spinach leaves, washed
2 slicesbacon, cook crisp and crumbled
2 tbspcrumbled bleu cheese
1/4red onion, thinly sliced
3 tbspBasic Salad Dressing (yield 1 cup):
1/3 cApple cider vinegar
2/3 cextra-virgin olive oil
1 tspDijon mustard
1garlic clove or 1 small shallot
1/2 tspsalt and a bit of pepper
1 tbsplemon juice (optional)

Place the spinach in a salad bowl and add the bacon, bleu cheese and red onion. Toss well, add the salad dressing and toss again. Serve immediately. 359 calories/serving; GL=1, Glycals=3
