Scrambled Eggs and Fried Irish Potato

Wash plantain and irish potatoes peel and cut into desired shape, toss salt into plantain and irish potatoes and shake then set aside

Heat up veg oil and once its hot, start frying your plantain till its tender and brown; remove from heat and set aside in a drainer do same for irish potatoes

Heat up frying pan, add little oil; break eggs in a small bowl, dice onion, tomatoes and pepper then set aside, add salt and whisk properly

Once the oil in the frying pan is hot, add onions after a minute add tomatoes and pepper then whisked eggs and fry till its caked then scramble, remove from heat and serve with fried plantain and irish potatoes
