In pot melt butter over med / med-high heat.

Add flour and whisk continuously until it just turns light brown.

Add milk and whisk to smooth out flour until no lumps are left.

Add cheese to pot and continue to whisk until melted and smooth.
- 5
Add as much pico de galla as you would prefer and continue to cook to warm the pico while whisking occasionally so not to scorch to pot.
