Baingan Bahar
A spicy delicacy from Bengal served with steamed rice

Cut the brinjals into halves.Wash and sprinkle over salt sugar and turmeric powder.

Heat one cup of mustard oil on a karai and fry the brinjal pieces golden brown. Remove from the karai and keep aside.Also remove half of the oil.

In the remaining oil add together all the masala paste and powder and Stir fry.Add chopped chillies.

When the masala starts smelling add water salt and sugar.

Cook into a thick gravy adding brinjal piece s and keep the lid covered stirring the contents at times.

Remove from the flame and serve hot with your favourite cereals or rice and roti.
