One day, my daughter asked me what the difference between ‘Yakisoba’ and ‘Yakiudon’ was. ‘Yakisoba’ is a dish of stir-fried noodles flavoured with Yakisoba sauce, which tastes like mix of Worcestershire sauce and soy sauce. ‘Yakiudon’ is obviously stir-fried udon noodles and originally seasoned with the same sauce, but nowadays dashi-flavoured soy sauce is more commonly used. However, there is no particular rule for the flavour and ingredients. This is my ‘Yakiudon’.

Ingredients

2 servings
  • 100-150 gPork *thinly sliced
  • 1/2Onion
  • 1/2Carrot
  • 3-4 leavesCabbage
  • 1 tablespoonOil
  • Salt & Pepper
  • Cooked Udon Noodles 2 servings
  • Okaka/Katsuobushi (Bonito Flakes) *optional
  • Spring Onion *finely chopped, optional
  • <Sauce>
  • 1 teaspoonDashi Powder
  • 2-3 tablespoonsSoy Sauce
  • 2 tablespoonsSake (Rice Wine) OR Water

Steps

  1. 1

    Prepare all vegetables and pork. Cut vegetables into strips and slice Pork thinly.

  2. 2

    Prepare Udon Noodles according to the instruction on the package. If you use already cooked Udon noodles, soak in hot water to loosen, then drain well.

  3. 3

    Make sauce by mixing all the sauce ingredients in a small bowl.

  4. 4

    Heat Oil in a large frying pan or wok, cook Pork and Vegetables and season with Salt and Pepper. Once the Pork is cooked, add Udon Noodles and toss and mix all well. Add the sauce, toss and mix to combine well.

  5. 5

    Sprinkle Katsuobushi (Bonito Flakes) and chopped Spring Onion on top and enjoy.
