No Boil Baked Pasta

Something easy, although pretty basic tomato pasta dish. I used fettuccine this time, I found they stick together worse than spaghetti or elbow macaroni, which is what I usually use. But I had half a jar of sauce, half a box of pasta, cheese and that is dang near all you need to make this.
Just a note, you can just double this, and use a 9 X 13 baking pan instead, and have plenty. Same oven temp and times.
So if a basic pasta dish that's easy is what you need, give this one a try.

No Boil Baked Pasta

Ingredients

  1. 1/2 poundsdry pasta
  2. Sauce
  3. 1 1/2 cupstomato sauce
  4. 1 1/2 cupsbroth or water
  5. 3 oz.Block of cream cheese (nice but optional)
  6. 1-2 clovesgarlic (or powder)
  7. 1salt to taste
  8. 1pepper to taste
  9. 1hot sauce to taste
  10. 1 tspItalian seasoning (optional)
  11. Topping
  12. 1 1/2 cupsgrated cheese

Cooking Instructions

    Preheat oven to 425F

    Spray 8X8 baking pan, break long noodles in half if you need to, to make then fit inside your pan, place pasta in pan.

    Warm cream cheese, i just microwave it for like 30 seconds. Then I cube it.

    Mix all sauce ingredients in a bowl. Mince garlic if using fresh. Try to break up and mix the cream cheese in as best as you can.

    Pour sauce over pasta, mix

    Cover with foil, bake 30 minutes

    Uncover, I like to stir it, just to break up any sticking to each other noodles, and mix in any liquid hanging out at the sides.

    Put about a cup of shredded cheese of your choice on top, place back in oven, uncovered, to just melt the cheese, not going for browned at this point.

    Remove from oven (but it's going back in)

    Stir the melted cheese into the pasta, that's the goal here.

    Add the rest of the cheese on top, place back in oven, uncovered, until melted and browned to your liking, about 13 minutes for me with this cheese.

    Let sit for 2-5 minutes to solidify, than serve.

My wife is disabled, she has M.S. And she finds it hard to cook from her wheelchair. I like a variety of foods, but hate tomatoes, so you don't see too many of my recipes with tomatoes on them. Also both of us have type II diabetes, so high carb and sweet is usually not on the menu either. We have one married daughter, and one that now lives in the Seattle area. We live in Texas, USA with our two dogs.Sorry I have not posted in awhile. Been taking chemo and radiation. and it has taken some out of me. Doctor says it seems to be working, so there is that.
