  1. 2-5 pieceschicken thighs
  2. 3cilantro roots
  3. 2 clovesgarlic
  4. 5white peppercorns
  5. 1 tablespoonoyster sauce
  6. 1 1/2 tablespoonssoy sauce
  7. Red Sauce Ingredients
  8. 1/2 cupketchup
  9. 1 tablespoonchili sauce
  10. 4 tablespoonssugar
  11. 1medium onion, diced
  12. 4 slicesginger
  13. 2 tablespoonsoyster sauce
  14. 1 tablespoonsoy sauce
  15. 1 1/2 cupschicken broth or water
  16. 4 tablespoonsvegetable oil

    Pound the cilantro roots, garlic, and peppercorns together, then divide into two portions. Place the first portion in a mixing bowl with the chicken thighs, soy sauce, and oyster sauce. Mix well and marinate the chicken thighs. Cover with plastic wrap and refrigerate for at least 1 hour.

    After 1 hour, remove the chicken from the refrigerator. Heat a pan and add oil. Once the oil is hot, place the chicken skin-side down and fry until golden on both sides, about 5 minutes per side.

    Once the chicken is golden on both sides, use about 1 tablespoon of the leftover oil from frying to sauté the remaining cilantro root mixture until fragrant. Add the chicken, ginger, onion, oyster sauce, sugar, soy sauce, ketchup, and chili sauce. Then add the chicken broth or water.

    Simmer over medium heat for the first 20 minutes with the lid on. After 20 minutes, reduce to low heat and continue simmering for 45 minutes to 1 hour. Before the last 20 minutes, add vegetables of your choice (today I added potatoes). Serve with hot steamed rice or enjoy with spaghetti.
