Soak the sabudana (tapioca pearls) in enough water to just cover them for 4 hours. Once they are soft and have absorbed the water, drain any excess. Add all the ingredients except the oil and knead into a dough-like mixture. Mix in the boiled potatoes as well.

Shape the mixture into flat patties.

Heat a skillet and add a little oil. Place the vadas on the skillet. When one side is crispy, brush a little oil on the other side and flip. Cook until both sides are golden and crispy. Serve hot with chutney.
