Cheap & Easy ‘Oyako' Don

I was 18 years old when I started living alone. I bought some very basic cooking tools, but what I really wanted for my new life was a small electric rice cooker. I knew it would free me from cooking quite a lot. If I had some cooked rice, meals could be prepared quite easily.
This is a Cheap & Easy version of ‘Oyako' Don for someone who may not have much cooking experience, money and kitchen equipment. The recipe is for 2 servings. If you are cooking it for just yourself, the leftover is always helpful for next day.

Cheap & Easy ‘Oyako' Don

Mix all seasoning ingredients in a small bowl. Prepare cooked rice. The following cooking processes won’t take long.

Add small amount of oil to the heated fraying pan and cook Chicken Mince. *Note: Chicken Mince is very sticky. Once Chicken started cooking, do not muck around with it and let it cook for a while. When the bottom is cooked, flip it over, then you can start breaking it.

Add Spring Onion, but reserve some green pieces. When Spring Onion started getting soft, add seasoning mixture. Bring it to the boil and keep cooking for a few minutes.

Beat the Eggs and pour the egg over evenly, sprinkle preserved green Spring Onion over, but DO NOT stir. Cover the pan with a lid, if you have it, until the egg is set.

Half fill a bowl with freshly cooked rice and cover it with the chicken & egg ('Oyako' means parent & child) mixture.
