Discard the outer cabbage leaves and then cut the cabbage in half and then finely slice the cabbage, alternatively you can use a cabbage grater. Discard the core of the cabbage.

Over a medium heat bring the stock to boiling point along with the bacon and thyme sprigs.

Once the stock is boiling add in the cabbage. Mix it well. Cover with lid and boil for 5 minutes.

Finally add in the butter and a good drizzle of olive oil. Season with salt and pepper and mix well. Serve immediately.
