Noodles in Indian Style

There are several ways of preparing noodles. This is one of my innovations where I prepared the noodles by giving a South Indian flavour. This can be one of the easiest and tastiest way of preparing your breakfast.

Steps

Boil the noodles in a bowl with water and 1 teaspoon salt and 1 teaspoon vegetable oil.

Rinse it with cold water and keep it aside

Heat a wok and roast the peanuts. Keep it aside.

Heat some vegetable oil and add the dry red chilli, mustard seeds and curry leaves. Let it splutter.

Add the onion and saute it till translucent.

Add the carrots and some salt. The quantity of the salt should be as per the carrots. We will add more salt and sugar in the later part of the preparation. Add the green chillies.

Stir it for a while and keep it covered. Repeat the process till the carrots are cooked well. Add the roasted peanuts and saute it well.

In a bowl, mix some salt and sugar with the noodles as per your taste.

Add the noodles in the wok and saute it well. Fry it for a while.

Remove it from the flame and serve hot with tomato ketchup.
